Freezer Cooking: Lasagna

Lasagna is such a great freezer meal. Everyone loves lasagna and it's a great dish to bring for housewarming, post-baby, post-surgery, etc. Every time you make this dish for someone in need, you should make two and freeze one for yourself! That is, if you can put off eating it right away. :) There are tons of lasagna recipes out there but this is our family favorite.

Lasagna

Ingredients:
1 lb ground beef
Lasagna noodles (I usually use 1/2 of a 12 oz box)
1 jar Prego tomato, onion, garlic Chunky Sauce
2 cups mozzarella shredded cheese
1 cup shredded provolone cheese
6-8 deli-style sliced mozzarella cheese

In a large skillet cook the ground beef until done. Cook noodles during this time according to the package. Drain beef and add tomato sauce. Spread thin layer of beef and sauce mixture in the bottom of a 9x13 baking dish. Layer noodles. Mix the shredded cheese and spread on top. Layer with beef, noodle and cheese mixture. Lay the sliced cheese in a row on top.

Cover very loosely with foil. Bake at 355 for 35-40 minutes. Remove foil the last 10 minutes. 


If you want to freeze it instead of eating it right away, it's incredibly easy. Put it in a freezer-safe 9x13 pan when you are putting it all together. Cover tightly with aluminum foil. When you're ready to eat it, thaw it in the refrigerator the night before. Bake the same as the original timing. If you need it in a hurry and don't have time to thaw it, cook it on 400 degrees for about 60 minutes. Cut into it to make sure it's hot all the way through though!
